For our Chaos Sparkler we harveted Pinto Grigio, Pinot Blanc and Vignoles and pressed them together. We fermented them and cold stablized them as a still wine before it went through a secondary fermentation in the cuve close method to give us our bubbles before being bottled.
Pear, apple and yeast
Demi-sec, meaning medium sweet on our scale. The touch of residual sugar really makes the fruit pop and compliments the incredible acidity making it tastes a lot drier.

The acidity and bubbles makes this a perfect wine on its own before dinner or we enjoy it with heavier, creamy based dishes like alfredo
