Chaos is a good descriptor of our journey to becoming a winery. All of us, with full time jobs, spent our nights, weekends,and holidays farming, making wine, creating a brand, and opening a tasting room - an amazing journey. We celebrate our chaotic beginnings by creating blended wines that represent a harmonious blend of several different white grapes to create this crisp, refreshing white wine. Fruit forward with a bit of sweetness it is great by itself but also pairs well with spicier fare such as blackened chicken or jambalaya. The primary components, Riesling and Vignoles, were both feremented on their own in stainless steel. The Muscato, Cayuga and Seyval were all harvested and fermented together in stainless steel. The final wine is a blend of 50% Riesling, 33% Vignoles, 7% Muscato, 7% Cayuga and 3% Seyval.
This wine has an incredible nose. The apricot from the Muscato jumps out of the glass and hints of apple in the background.
Medium Dry with a ripe fruit flavor from and an incredible acidity from Vignoles.
Brilliant, light yellow color
Pairs great with spicy, ethnic foods and personal favorite with New Orleans style cuisine.
