To make the purest possible expression of Chardonnay, we started by harvesting a touch early to ensure the cleanest fruit possible. Then we de-stemmed, crushed and pressed the juice off to ferment to near dryness in a stainless steel tank. No oak, no malo-lactic fermentation. Purity.

We hand harvested seven tons of fruit from our Matheson Road and Swede Road vineyards on October 6th, 2011. Stainless steel ferementors were used before this wine was filtered and bottled on February 17th.
