2011 Chaos Red Cuvee

Chaos is a good descriptor of our journey to becoming a winery.  All of us, with full time jobs, spent our nights, weekends, and holidays farming, making wine, creating a brand, and opening a tasting room - an amazing journey.  We celebrate our chaotic beginnings by creating blended wines that represent a harmonious blend of several differentred grape varietals to create this supple, approachable red wine.  Fruit forward with a hint of toast from the oak and a long finish.  Kick back, forget the chaos in your life, enjoy the moment with a glass of exceptional wine.

Vinification

This wine is made from a blend of several different grapes - 44% Cabernet Franc, 26% Merlot, 20% Pinot Noir and 10% Chambourcin.  Pinot Noir was harvested on September 29th and Chambourcin the first week of October.  Both were feremented separately.  The Cabernet Franc and Merlot were harvested on October 30th and co-fermented.  The final blend was pulled together in early February and then we added oak chips for a faster oak extraction.  It was filtered and then bottled in mid-April.  

Aroma

Berry, especially cherry with a subtle oak undertone. 

Flavor

Medium dry, medium bodied and with light tannins.  Cherry and berry flavors pop along with the oak in the slow finish.
