To make the purest possible expression of Chardonnay, we harvest a touch early to ensure clean fruit with a crisp acidity.  We destem, crush and press within a few hours of harvest and ferment to near dryness in a stainless steel tank.  No oak, no malo-lactic fermentation.  Purity.
